Crust:
- 24 Golden Oreo cookies crushed
- 6 tablespoons butter melted
Filling:
- 1 cup fresh strawberries sliced (or thawed frozen strawberries)
- 1 cup heavy whipping cream
- 1 8 oz package cream cheese (softened)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice optional, for brightness
Prepare the Crust:
Crush the Golden Oreo cookies in a food processor until they have a sandy texture. If you don’t have a food processor, place the cookies in a ziplock bag and crush them with a rolling pin.
Mix the crushed Oreos with the melted butter until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Freeze the crust for about 10 minutes to set.
Make the Whipped Cream:
In a mixing bowl, beat the heavy whipping cream until stiff peaks form.
Prepare the Cream Cheese Mixture:
In a separate bowl, mix the softened cream cheese, powdered sugar, vanilla extract, and lemon juice (if using) until smooth.
Layer the Pie:
Spread half of the cream mixture over the chilled crust.
Top with half of the sliced strawberries.
Add the remaining cream mixture on top.
Finish by layering more strawberry slices on top.
For the crust, you can substitute Golden Oreos with graham crackers or shortbread cookies. If using frozen strawberries, make sure to thaw and drain them well to remove excess moisture before layering.
This pie can be kept frozen for up to 1 month; wrap it tightly to avoid freezer burn. You can make this pie without cream cheese by substituting with mascarpone or Greek yogurt for a lighter version.
