Ingredients
  

  • Hashbrowns shredded or diced – 4 cups
  • Cheddar cheese shredded – 2 cups
  • Cream of chicken soup – 1 can 10.5 oz
  • Sour cream – 1 cup
  • Butter – 1/4 cup melted
  • Milk – 1/2 cup
  • Eggs – 2 large
  • Onion chopped – 1 medium
  • Salt and pepper – to taste
  • Optional add-ins: Ground beef cornflakes, sausage, or ham

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Mix Ingredients:
  • In a large mixing bowl, combine the hashbrowns, cheddar cheese, cream of chicken soup, sour cream, melted butter, milk, eggs, chopped onion, salt, and pepper.
  • Stir until all ingredients are well mixed. Feel free to add any optional ingredients you desire.
  • Prepare Baking Dish:
  • Grease a 9x13 inch baking dish with cooking spray or butter.
  • Pour the mixture into the prepared dish and spread it out evenly.
  • Add Topping (Optional):
  • For extra crispiness, drizzle a bit more melted butter over the top or sprinkle crushed cornflakes before baking.
  • Bake the Casserole:
  • Place the dish in the preheated oven and bake for approximately 50 minutes, or until the top is golden brown and the center is bubbly.
  • Rest:
  • Remove from the oven and let the casserole rest for about 10 minutes before serving to allow it to set.
  • Serve Warm: Enjoy warm with your favorite sides or toppings!

Storage: Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the microwave or oven.
