Ingredients
  

For the Main Salad

  • 1 pound of ground beef
  • 1 packet of taco seasoning mix or homemade
  • 1 head of lettuce chopped (Iceberg or Romaine)
  • 2 cups of cherry tomatoes halved
  • 1 cup of shredded cheddar cheese
  • 1 cup of corn kernels canned or fresh
  • 1 cup of black beans drained and rinsed
  • 2 cups of crushed Doritos Nacho Cheese flavor is recommended

For the Dressing

  • ½ cup of Catalina dressing
  • 1 tablespoon of taco seasoning

Optional Toppings

  • Sliced avocado or guacamole
  • Sour cream
  • Sliced black olives
  • Salsa or pico de gallo
  • Jalapeño slices

Instructions
 

Cook the Ground Beef

  • Heat a skillet over medium heat.
  • Add the ground beef and cook until browned and fully cooked.
  • Stir in the taco seasoning mix and a splash of water. Let it simmer for about 5 minutes. Set aside to cool slightly.

Prep the Salad Base

  • In a large salad bowl, combine the chopped lettuce, cherry tomatoes, shredded cheddar cheese, corn, and black beans.
  • If meal prepping, divide the salad into individual containers, adding toppings later for freshness.

Mix the Dressing

  • In a small bowl, whisk together the Catalina dressing and taco seasoning for an extra zesty kick.

Assemble and Add Crunch

  • Top your salad with the cooled ground beef and crushed Doritos.
  • Drizzle generously with the dressing and toss to combine.

Serve

    Optional: Set up a taco salad bar with extra toppings so everyone can create their own perfect bowl!

      For a healthier version, substitute Doritos with baked tortilla chips and ground beef with ground turkey.
      Leftovers can be stored in an airtight container for up to 3 days, but keep the chips separate to maintain their crunch.
