Equipment

  • Cutting board
  • Chef's knife
  • Forks (for shredding chicken)
  • Large mixing bowl
  • Tortilla warmer
  • Skillet or griddle (optional)
  • Measuring Cups and Spoons

Ingredients

  • 1 Rotisserie chicken (shredded) Tip: Use leftover rotisserie chicken for extra convenience!
  • 4 Tortillas Tip: You can use flour, whole wheat, or spinach herb tortillas or even lettuce wraps!
  • Green leaf lettuce
  • ½ cup Ranch dressing Tip: For a lighter option, use Greek yogurt mixed with herbs.
  • 1 cup Cheddar cheese (shredded)
  • ½ cup Crispy bacons (chopped) Tip: You can use turkey bacon or omit for vegetarian wraps.
  • 1 cup Tomatoes (diced)
  • ½ cup Green onions (chopped)

Instructions

Shred the Chicken

  • Start with your pre-cooked rotisserie chicken. Use two forks to shred the meat into bite-size pieces in a large mixing bowl.
  • Pro Tip: If the chicken is a bit tough, microwave it for 15 seconds to warm it up and make shredding easier!

Mix the Filling

  • Add your chopped green leaf lettuce, diced tomatoes, shredded cheddar cheese, chopped crispy bacon, and green onions to the bowl with the chicken. Drizzle in your ranch dressing and gently mix all the ingredients together until everything is well combined.
  • Pro Tip: Do not overmix, to keep the veggies slightly crisp for extra texture!

Prep the Tortillas

  • Lay out your tortillas flat on a clean work surface. If using flour tortillas, you can lightly toast them on a skillet for about a minute on each side to warm them up. This step is optional but gives the wrap a nice, flexible texture.
  • Pro Tip: Cover your tortillas with a damp paper towel in the microwave for 10 seconds if they feel stiff.

Assemble the Wraps

  • Place a large green leaf in the center of each tortilla. Spoon a generous amount of the chicken mixture on top of the greens, forming a neat line down the middle. Carefully fold in the sides of the tortilla and roll it up tightly, ensuring all the tasty ingredients are nestled inside.

Final Touches

  • Once wrapped, cut each wrap in half diagonally for a pretty presentation. Let them rest for a few minutes so the flavors meld together and the wrap holds its shape. Your rotisserie chicken wraps are now ready to be served and enjoyed!
