These Mini McGriddle Bites are perfect for a grab-and-go breakfast. Packed with fluffy pancakes and delicious fillings, they’re a family favorite that can be made ahead of time for busy mornings.

Ingredients
  

For the Pancakes:

  • Pancake mix or your favorite homemade pancake recipe
  • Milk can substitute with almond, soy, or oat milk
  • Eggs

For the Filling:

  • Cooked sausage or substitute with bacon, ham, etc.
  • Cheese cheddar, Colby jack, or Monterey jack
  • Maple syrup for drizzling, optional

Instructions
 

Prepare Pancake Batter:

  • In a large bowl, combine pancake mix, milk, and eggs according to your recipe or packet instructions. Mix until just combined.

Fill Muffin Tin:

  • Lightly grease a muffin tin. Pour a spoonful of pancake batter into each muffin cup, just enough to cover the bottom.

Add Filling:

  • Sprinkle a small amount of cheese and a little cooked sausage into each muffin cup. Feel free to add other fillings like diced veggies or additional meats.

Top with Batter:

  • Carefully pour another spoonful of pancake batter over the filling in each muffin cup, completely covering the filling.

Bake:

  • Place the muffin tin in a preheated oven. Bake until golden brown and cooked through, about 10 minutes. Use a toothpick to check for doneness; if it comes out clean, they’re ready.

Serve:

  • Let them cool slightly before removing from the muffin tin. Serve warm with a drizzle of maple syrup if desired.

Notes

These Mini McGriddle Bites can be meal prepped. Cook a batch over the weekend and store in an airtight container in the fridge for up to 3 days.
They freeze beautifully. Allow to cool completely, freeze on a baking sheet, then transfer to a freezer-safe bag or container for longer storage.
For a gluten-free option, substitute the pancake mix with a gluten-free blend.
