Equipment

  • Baking sheet A heavy-duty, nonstick baking sheet ensures even roasting.
  • Silicone Spatula Perfect for stirring and scraping every last drop of glaze.
  • Vegetable Peeler Makes prep quick and easy.
  • Small Saucepan For preparing the honey garlic butter glaze.

Ingredients

Fresh Carrots - 1 pound

  • Look for vibrant orange with greens if you want them extra pretty

Unsalted Butter - 3 tablespoons

  • For the glaze; unsalted allows you to control saltiness

Garlic Cloves - 3 cloves

  • Fresh, minced for the best flavor

Honey - 2 tablespoons

  • For a touch of sweetness

Olive Oil - 1 tablespoon

  • Enhances roasting and flavor

Salt - ½ teaspoon

  • To taste

Black Pepper - ¼ teaspoon

  • To taste

Instructions

Prep Your Carrots:

  • Peel the carrots and trim the tops, leaving about an inch of the green stems for a nice presentation. If your carrots are thick, slice them in half lengthwise for even cooking.

Preheat the Oven:

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to make cleanup easier.

Make the Honey Garlic Butter Glaze:

  • In a small saucepan over medium heat, melt the unsalted butter. Once melted, add the minced garlic and sauté until fragrant (about 1 minute). Stir in the honey, olive oil, salt, and pepper until well combined. Be careful not to burn the garlic as it can turn bitter.

Coat the Carrots:

  • Place the prepared carrots on the lined baking sheet in a single layer. Drizzle the honey garlic butter sauce over the carrots and toss gently to coat them evenly.

Roast the Carrots:

  • Roast the carrots in the preheated oven for 20-25 minutes, flipping them halfway through. They are done when they are tender and beautifully caramelized on the edges.

Serve:

  • For the final touch, sprinkle chopped fresh parsley or a pinch of flaky sea salt over the roasted carrots before serving, if desired.

Notes

Carrot Size Matters: Smaller, thinner carrots roast faster and more evenly. If using larger carrots, cut them in half or into chunks for optimal texture.
For a spicy kick, consider adding a sprinkle of red pepper flakes to the glaze.
These carrots pair wonderfully with roasted meats and light grains like quinoa or farro. Enjoy!
