Ingredients
  

  • 1 tbsp olive oil extra virgin
  • 2 cups corn fresh or canned, drained
  • 1 cup cherry tomatoes halved
  • 1 cup bell peppers diced; any color
  • 1 cup green onions chopped
  • 1 cup Fritos corn chips
  • ½ cup mayonnaise
  • 1 tbsp lime juice
  • 1 tsp chili powder optional
  • Salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the corn, cherry tomatoes, bell peppers, and green onions.
  • In a small bowl, whisk together the olive oil, mayonnaise, lime juice, and chili powder (if using). Season with salt and pepper to taste.
  • Pour the dressing over the corn mixture and toss gently to combine.
  • Just before serving, fold in the Fritos corn chips to maintain their crunch.
  • Serve immediately or refrigerate for 30 minutes for flavors to meld.

Feel free to customize this salad by adding diced avocado, black beans, or jalapeños for an extra kick.
For a lighter version, you can substitute Greek yogurt for mayonnaise.
