Equipment

  • Baking tray
  • Oven
  • Mixing bowl
  • Knife
  • Cutting board
  • Spoon or Spatula

Ingredients

  • Fresh oysters - Use the freshest oysters available for the best flavor.
  • Spinach - Fresh or frozen chopped.
  • Fresh parsley - Finely chopped.
  • Green onions - Sliced can substitute with shallots.
  • Bread crumbs - Use gluten-free if needed.
  • Butter - Melted or olive oil for a lighter option.
  • Garlic - Minced fresh is preferred over powdered.
  • Lemon juice - Freshly squeezed.
  • Salt and pepper - To taste.

Instructions

Preheat & Prepare:

  • Preheat your oven to 400°F (200°C).
  • Carefully shuck the fresh oysters, placing them on a baking tray lined with a thin layer of rock salt to stabilize them during baking.

Mix the Topping:

  • In a mixing bowl, combine the chopped spinach, parsley, green onions, minced garlic, and bread crumbs.
  • Pour the melted butter over the mixture, adding a splash of lemon juice, salt, and pepper. Stir until everything is well combined.

Assemble the Oysters:

  • Spoon a generous amount of the topping over each oyster, distributing it evenly across the surface.

Bake to Perfection:

  • Place the tray in the oven and bake for about 10-15 minutes. The topping should be golden and crispy, while the oysters remain tender and juicy.

Final Touch & Serve:

  • Allow the oysters to cool slightly before serving. Plate them on a bed of ice or sea salt, garnished with lemon wedges.
