Ingredients
  

Ground Spicy Sausage – 1 pound

Beer – ½ cup (pale ale or lager recommended)

Diced Tomatoes & Green Chilies – 1 can (about 10 ounces)

  • Notes: Rotel-style works best; you can use fresh pico de gallo for a fresher taste.

Garlic Powder – 1 teaspoon

  • Notes: Fresh minced garlic can be used for a stronger flavor.

Prep the Ingredients

  • In a skillet over medium heat, brown the spicy sausage, breaking it apart until fully cooked. Drain any excess fat.

Assemble the Crockpot

  • Add the browned sausage to the slow cooker. Then, mix in the cubed cream cheese, processed cheese, drained diced tomatoes, garlic powder, and beer. Stir roughly to combine.

Cook It Low and Slow

  • Set the crockpot to the low setting and let it cook for about 1 hour, stirring every 20-30 minutes until all the ingredients are melted and creamy. If desired, add a splash of milk or beer to adjust the consistency.

Serve

  • Once the dip is creamy and smooth, serve hot with an assortment of chips, pretzels, or fresh vegetables for dipping.
