Ingredients
  

  • Ground Beef: 1 pound preferably lean
  • Potatoes: 3 medium-sized Russet or Yukon Gold
  • Onion: 1 medium diced
  • Garlic: 2 cloves minced (or 1 teaspoon garlic powder)
  • Beef Broth: 4 cups can substitute with chicken broth if preferred
  • Cheddar Cheese: 1 cup shredded sharp or mild
  • Milk: 1 cup whole or low-fat
  • Butter: 2 tablespoons
  • Flour: 2 tablespoons all-purpose
  • Salt and Pepper: to taste

Instructions
 

Brown the Beef:

  • Heat the Dutch oven or large pot over medium heat.
  • Add the ground beef, cooking until browned, approximately 5-7 minutes, breaking it apart with a spoon. Drain excess grease.

Sauté the Vegetables:

  • Add the diced onion to the pot with the browned beef. Sauté until it softens and becomes translucent (about 3-4 minutes).
  • Stir in the minced garlic and cook for another minute until fragrant.

Cook the Potatoes:

  • Add the diced potatoes and beef broth to the pot. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes until the potatoes are tender and easily pierced with a fork.

Make It Creamy:

  • In a separate bowl, whisk together milk, butter, and flour until smooth.
  • Gradually pour the creamy mixture into the soup pot, stirring continuously. Allow the soup to simmer until it thickens slightly (about 5 minutes).

Add Cheese:

  • Slowly stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.

Serve:

  • Ladle the hot soup into bowls and enjoy. Optionally, top with extra cheese, crispy bacon bits, or chives as desired.

Ingredient Substitutions: You can use ground turkey or chicken instead of beef, and sweet potatoes or cauliflower for a different flavor profile.
