Ingredients
  

For the Pastry:

  • 1 package Crescent roll dough or puff pastry or phyllo cups

For the Filling:

  • 8 ounces Brie cheese cut into small squares
  • 1 cup Cranberry sauce whole berry or homemade
  • Zest of 1 orange
  • 1 tablespoon Fresh orange juice
  • 1 tablespoon Sugar
  • 1/4 teaspoon Cinnamon
  • Optional: Chopped pecans or walnuts for topping

For Garnish:

  • Fresh thyme or rosemary sprigs optional

Instructions
 

Prep the Oven and Muffin Tin:

  • Preheat your oven to 375°F (190°C).
  • Spray the mini muffin tin with cooking spray to prevent sticking.

Prepare the Cranberry Sauce (if making homemade):

  • In a small saucepan, combine cranberry sauce, orange juice, orange zest, sugar, and cinnamon.
  • Bring to a boil, then reduce to a simmer for about 5 minutes until the sauce thickens. Set aside to cool slightly.
  • (For store-bought sauce, mix in a teaspoon of orange zest and a pinch of cinnamon for added flavor.)

Prepare the Pastry:

  • If using crescent roll dough, unroll and pinch seams together to form a large rectangle.
  • Cut the dough into 24 equal squares.
  • Press each square into a mini muffin cup, forming a little cup.

Assemble the Bites:

  • Place a square of brie cheese in each pastry cup.
  • Spoon about 1/2 tablespoon of cranberry sauce on top of each piece of brie.
  • If desired, sprinkle chopped pecans or walnuts for added texture.

Bake:

  • Place the muffin tin in the preheated oven and bake for 10-15 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.

Garnish and Serve:

  • Remove from the oven and let cool for 2 minutes.
  • Garnish with fresh thyme or rosemary sprigs if desired.
  • Serve warm.

Notes

hese bites can be prepared ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the baking time if they are cold from the fridge.
