Ingredients
  

  • 1 large head of cauliflower cut into bite-sized florets
  • 1 cup shredded cheddar cheese or a mix of your favorite cheeses
  • 1/2 cup cream cheese softened
  • 1/3 cup mayonnaise
  • 1/4 cup heavy cream
  • 2 slices of cooked bacon crumbled (optional, but highly recommended!)
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic minced
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions
 

Step 1: Prep the Cauliflower

  • Preheat your oven to 375°F (190°C).
  • Bring a large pot of salted water to a boil.
  • Blanch the cauliflower florets for 3-4 minutes until slightly tender but not mushy.
  • Drain well and pat dry with paper towels to remove excess water.

Step 2: Make the Cheesy Sauce

  • In a medium saucepan over low heat, combine the cream cheese, mayonnaise, heavy cream, and minced garlic.
  • Stir until smooth and melted, about 1-2 minutes.
  • Add 3/4 cup of shredded cheddar and 1/4 cup of Parmesan cheese. Stir until fully melted and the sauce is thick and creamy.
  • Season the sauce with smoked paprika, salt, and pepper to taste.

Step 3: Assemble the Bake

  • Lightly grease a baking dish with butter or olive oil.
  • Arrange the blanched cauliflower florets in the baking dish.
  • Spread the cheesy sauce evenly over the cauliflower, stirring lightly to coat.
  • For extra indulgence, sprinkle the remaining cheddar cheese and crumbled bacon on top.

Step 4: Bake to Perfection

  • Bake the dish uncovered in the preheated oven for 20-25 minutes, or until the top is bubbly and golden.
  • For an extra cheesy crust, switch the oven to broil for the last 2-3 minutes, keeping a close eye to avoid burning.

Step 5: Serve and Enjoy!

  • Let the baked cauliflower cool for about 5 minutes before serving.
  • Garnish with fresh parsley or green onions for a pop of color.
