Equipment

  • Non-stick skillet For cooking the quesadillas evenly without sticking.
  • Spatula  To flip the quesadillas easily.
  • Small mixing bowl  For preparing the cream cheese filling.

Ingredients
  

4 large flour tortillas

1 cup blueberries (fresh or frozen)

4 oz cream cheese (softened)

1 tbsp honey

1/2 tsp vanilla extract

1 tbsp butter (for cooking)

Optional Toppings:

  • Powdered sugar for dusting
  • Greek yogurt for dipping
  • Drizzle of additional honey

Instructions
 

Prepare the Cream Cheese Mixture:

  • In a small mixing bowl, combine the softened cream cheese, honey, and vanilla extract. Mix until smooth and creamy.

Assemble the Quesadillas:

  • Lay a tortilla flat on a clean surface. Spread 2-3 tablespoons of the cream cheese mixture evenly on one-half of the tortilla.
  • Sprinkle 1/4 cup of blueberries over the cream cheese. Fold the tortilla in half to create a half-moon shape. Repeat for the remaining tortillas.

Cook the Quesadillas:

  • Heat a non-stick skillet over medium heat. Add 1/2 tablespoon of butter and let it melt.
  • Place one folded quesadilla in the skillet and cook for 2-3 minutes on each side or until the tortilla is golden brown and crispy and the blueberries start to ooze slightly.
  • Remove from the skillet and repeat with the remaining quesadillas, adding more butter as needed.

Slice and Serve:

  • Let the quesadillas cool slightly before slicing them into triangular wedges. Dust with powdered sugar if desired and serve with Greek yogurt and a drizzle of honey on the side.

Notes

For a keto-friendly version, substitute the flour tortillas with low-carb tortillas and use a sugar-free honey alternative.
Frozen blueberries work just as well, but pat them dry before using to avoid excess moisture.
Add a pinch of cinnamon to the cream cheese mixture for a warm flavor twist.
