Equipment

  • Baking Tray: Used for baking the fries.
  • Parchment Paper or Silicone Mat: Prevents the fries from sticking to the tray.
  • Colander: For soaking and draining the fries.
  • Bowl: For tossing the fries with cornstarch and seasonings.
  • Mandoline Slicer (optional): For achieving uniform slices of sweet potatoes.

Ingredients

  • 2 large sweet potatoes: Peeled if preferred.
  • 2 tablespoons cornstarch: Enhances crispiness.
  • 2-3 tablespoons olive oil: For coating the fries.
  • 1 teaspoon garlic powder: For additional flavor.
  • 1 teaspoon paprika: Adds a touch of smokiness.
  • Salt: To taste enhances overall flavor.
  • Pepper: To taste adds a bit of heat.

Instructions

  • Preheat the Oven: Preheat your oven to 425°F (220°C) and line your baking tray with parchment paper or a reusable nonstick silicone mat.
  • Slice the Sweet Potatoes: Cut the sweet potatoes into even strips, about 1/4 inch thick, for even cooking.
  • Soak the Fries: Soak the fries in cold water for 30 minutes to remove excess starch, which helps in achieving a crispy texture.
  • Dry the Fries: After soaking, thoroughly pat the fries dry using a kitchen towel. Ensure they are not damp before proceeding.
  • Coat with Cornstarch: In a bowl, toss the dried fries with cornstarch until lightly coated. This step significantly enhances crispiness.
  • Season the Fries: Drizzle the coated fries with olive oil and sprinkle the garlic powder, paprika, salt, and pepper. Toss everything to ensure even coating.
  • Spread and Bake: Arrange the fries in a single layer on the prepared baking sheet, making sure they don’t overlap. Bake for 20 minutes, then flip them and bake for an additional 10-15 minutes until crispy and golden.

Notes

Dipping Sauce Ideas: Serve with your favorite dipping sauces like ketchup, spicy mayo, honey mustard, or ranch.
Storage: Leftover fries can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in an oven for best results to regain crispiness.
